i made this pizza from scratch and you can too.
i use this dough recipe.
i make my own sauce which couldn't be easier and it's the best in the world.
1 14.5 or 14 oz can whole peeled tomatoes.
1/4 cup extra virgin olive oil
1/2 tsp. red pepper flakes
1 tbsp. dried oregano
3 large garlic cloves, crushed with the back of a knife and then smashed around a little.
put the evoo in a sauce pan and set it to a gentle heat.
add the garlic, oregano and chili flakes.
sautee for a minute and a half. or until things start to smell like fucking dominos.
add the whole tomatoes to the pot.
bring to a boil and then reduce heat and simmer without breaking the tomatoes apart for about 50 minutes.
after 50 minutes (you could go longer, it will only get yummier) add 1 tbsp of balsamic vinegar and 1/2 tsp to 1 tsp salt.
throw the entire contents of the pot into a food processor or blender (i use the former) and blend until completely smooth like pizza sauce.
taste for seasoning and try not to drink it.
throw it on top of a damn pizza and then add whatever toppings you want.
i used leftover short ribs we had the night before.
i caramelized an onion.
sauteed a zucchini.
sliced a tomato from the garden and sliced a fresh jalapeno.
chopped up some parsley.
put all that delicious shit on there and then topped it with cheese.
i use buffalo mozzarella bc it doesn't fuck with my intestines the way cows milk cheese does.
and it's stupid delicious.
this type of dinner is perfect for using the contents of your vegetable drawer and last night's meatloaf. i am 100% behind a meatloaf pizza.
